CORN WITH PINTO BEANS
  • Ingredients
  • 1 cup dry pinto beans
  • 2 cups frozen corn kernels
  • 1/2 pound salt pork, diced
  • 1 medium-sized onion, chopped
  • 1 tablespoon lard or vegetable oil
Directions
  1. In a large heavy saucepan, place pinto beans, corn, and salt pork in water to cover and bring to a boil
  2. Simmer for 2 hours or until tender. Saute onion in lard or oil
  3. Add to beans and corn mix- ture and serve
  4. Makes 6 servings.
