CHILI SQUASH
CHILI SQUASH
Ingredients
3 medium-sized squash, diced
2 onions, chopped
1 clove garlic, minced
4 tablespoons butter or vegetable oil
1 cup tomato puree
1 small can tomato paste
1 sweet red pepper
1 small can green chilies, sliced
2 teaspoons ground red chili
Directions
In a large heavy skillet, saute squash, onions, and gar- lic over low heat in butter or oil until squash is lightly browned. Add remaining ingredients and simmer, covered, for 30 minutes
Makes 6 servings.
