ROASTED ONIONS
  • Ingredients
  • 3/4 cup water
  • 1/2 cup balsamic or red wine vinegar
  • 2 teaspoons firmly packed brown sugar
  • 1 /8 teaspoon pepper
  • 4 medium-size onions
  • salt
Directions
  1. Blend the water, vinegar, sugar, and pepper
  2. Pour into a 9 x 13-inch baking pan
  3. Cut onions in half lengthwise through skins; place, cut side down, in vinegar mixture. Bake, uncovered, in lower third of a 400F
  4. oven until onions give readily when gently squeezed and cut sides are glazed (1 to 1-1/4 hours)
  5. Arrange, cut side up, on a platter
  6. Season to taste with salt
  7. Goes well with roast beef, turkey, pork chops, or sausages
  8. Makes 8 servings.
