ZUCCHINI WITH CORN AND PEPPERS
  • Ingredients
  • 3 tablespoons butter or margarine
  • 2-1/2 pounds zucchini, cut into 1/4-inch slice
  • 1-1/2 cups fresh com kernels, or 1 package (10 oz.)
  • frozen whole-kernel com, thawed
  • 1 red bell pepper, seeded and chopped
  • 1 medium-size onion, chopped
  • 2 cloves garlic, minced or pressed
  • salt and pepper
Directions
  1. Melt butter in a wide frying pan over high heat; add zucchini, corn, bell pepper, onion, and garlic. Cook, stirring often, until vegetables are tender but crisp to bite (about 5 minutes)
  2. Season to taste with salt and pepper
  3. Makes 8 to 10 servings.
