GREEN TOMATO AND CHEESE PIE
  • Ingredients
  • 9-inch prebaked pie shell
  • 1 cup onions, chopped
  • 1 cup green pepper, chopped
  • 1 clove garlic, minced
  • 3 tablespoons vegetable oil
  • 5 to 6 medium green tomatoes
  • 2 tablespoons flour
  • 2 tablespoons salt
  • 1/8 teaspoon pepper
  • 1 cup Cheddar cheese, shredded
  • parsley flakes
Directions
  1. Saute onions, green pepper and garlic in vegetable oil in a large skillet
  2. Cut tomatoes into chunks and add to onions, pepper and garlic. Cook over hot fire 12-15 minutes, stirring frequently
  3. Stir in flour, salt and pepper until blended
  4. Pour mix- ture into pie shell
  5. Spread grated cheese evenly over tomatoes
  6. Sprinkle with parsley flakes
  7. Bake in hot (400F.) oven about 15 minutes or until top is nicely browned
  8. Makes 6 to 8 servings.
