WILD SAGE BREAD
  • Ingredients
  • 1 package dry yeast
  • 1 cup cottage cheese
  • 1 egg
  • 1 tablespoon lard or other shortening, melted
  • 1 tablespoon sugar
  • 2 teaspoon crushed dried wild sage
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup lukewarm water
  • 2-1/2 cups flour
Directions
  1. Mix dry ingredients together
  2. Dissolve yeast in warm water
  3. Beat together egg and cheese until smooth
  4. Add melted shortening and yeast. Combine all ingredients in a large mixing bowl, adding flour mixture in small amounts and blending thoroughly after each addition
  5. Form a stiff dough
  6. Cover dough with a tea towel and allow to rise in a warm place for an hour or until dough has doubled in size. After dough has doubled, punch dough down and knead for one minute
  7. Place dough in a well-greased loaf or casserole pan
  8. Cover and allow to rise again for 40 minutes
  9. Bake in a preheated 350F
  10. oven for 50 min- utes or until bread sounds hollow when tapped with a spoon
  11. Makes 1 loaf.
