MOLASSES PIE
  • Ingredients
  • 2 cups sorghum molasses
  • 1/2 cup sugar
  • 1/2 cup water
  • 5 eggs
  • pinch of salt
  • 1 teaspoon corn starch
  • pinch of soda
  • 1 teaspoon butter
  • dash of nutmeg
Directions
  1. Save the whites of 2 eggs for meringue
  2. Beat 3 eggs and 2 yolks
  3. Stir in 2 cups of molasses, sugar, water, and salt
  4. Pour into top of double boiler, add com starch; then place over hot water and stir while cooking
  5. Cook until quite thick
  6. Stir in soda, butter, nutmeg
  7. Set aside to cool while baking a large, deep-crust pie shell
  8. When the filling is cool, pour into pie shell
  9. Make meringue and pile on top of pie; place in oven until light brown
  10. This makes a large pie.
