PINON COOKIES
Ingredients
2 cups whole wheat flour
4 cups white flour
2 teaspoons baking powder
1 teaspoon salt
2 cups butter
1-1/2 cups sugar
1-3/4 cup water
1 cup shelled and chopped pinion nuts
cinnamon
sugar
Directions
Combine flour, baking powder, and salt
In another bowl, cream butter, and sugar until fluffy
Gradually add flour alternately with water until a stiff dough is formed
Add pinon nuts, blending thoroughly. Roll out the dough on a lightly floured board to a 1/2- inch thickness
Cut into cookies with cookie cutters
Sprinkle cookies in equal amounts of cinnamon and sugar. Bake cookies on a well-greased cookie sheet in a pre- heated 350F
oven for about 15 minutes or until golden
Makes about 8 dozen.
