PINON COOKIES
  • Ingredients
  • 2 cups whole wheat flour
  • 4 cups white flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups butter
  • 1-1/2 cups sugar
  • 1-3/4 cup water
  • 1 cup shelled and chopped pinion nuts
  • cinnamon
  • sugar
Directions
  1. Combine flour, baking powder, and salt
  2. In another bowl, cream butter, and sugar until fluffy
  3. Gradually add flour alternately with water until a stiff dough is formed
  4. Add pinon nuts, blending thoroughly. Roll out the dough on a lightly floured board to a 1/2- inch thickness
  5. Cut into cookies with cookie cutters
  6. Sprinkle cookies in equal amounts of cinnamon and sugar. Bake cookies on a well-greased cookie sheet in a pre- heated 350F
  7. oven for about 15 minutes or until golden
  8. Makes about 8 dozen.
