Remove
from the heat and chill.
Pour the chilled mixture into the canister of your ice
cream freezer
Add lime juice, lemon juice, and the lime
rind
Mix with a wooden spoon or spatula
Follow the
directions for your ice cream maker to create a firm ice.
To serve, form into balls with an ice cream scoop, dip-
ping it into warm water between scoops
Serve in fluted
sherbets but wineglasses-especially the tulip type-will
also work
