CAPIROTADA
  • Ingredients
  • 2 cups toasted bread
  • 4 eggs
  • 2 cups milk
  • 1 cup raisins in hot water
  • 1/2 pound brown sugar
  • 2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • 1 /2 onion
  • 1/2 pound, melted butter
  • 1 cup Longhorn cheese
  • 2 cups sliced apples
Directions
  1. Break up toasted bread, preferably old, dry bread
  2. In another bowl, beat eggs well and add milk
  3. Separately, put raisins in 1 cup hot water to cover
  4. Allow to soak and plump for five minutes, and drain
  5. Add dark-brown sugar to the milk-egg mixture and mix in with sliced apples
  6. Add cinnamon, and nutmeg
  7. Chop onion fine
  8. Mix all thoroughly with the bread and moisten with but- ter melted in 2 cups hot water. Grate Longhorn cheese
  9. Place layers of the pudding in a casserole, alternately with layers of the cheese
  10. Bake at 350F
  11. about 45 minutes, and serve hot
  12. Sprinkle with colorful candy sprinkles.
