Tropical Sweet Spice Rub
Ingredients
1 tablespoon ground allspice
1 tablespoon ground nutmeg
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon cayenne pepper
1 teaspoon salt
Directions
Combine all ingredients and store in a jar for up to 3 months. Yield: 1/4 cup SUGGESTED USE: This rub is the basis of a Jerk rub but without the kick
Use it sparingly on shrimp (30 minutes), fish fillets (30 minutes) or boneless chicken breasts (30 minutes)
Serve the cooked food with a tropical fruit chutney.
