Tomato Meat Sauce
  • Ingredients
  • 3/4 pound each lean sirloin steak
  • and pork tenderloin, well-trimmed
  • 2 tablespoons olive oil
  • 1/2 cup minced onion
  • 3 garlic cloves, minced
  • 1 medium-size carrot, minced
  • 1 celery stalk, minced
  • 1 cup chopped mushrooms
  • 1 (6 ounce) can tomato paste
  • 2 cups dry red wine
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley
  • freshly ground black pepper to taste
Directions
  1. In a large skillet, brown the steak and pork over medium-high heat about 10 minutes
  2. Transfer the meat to a plate and spoon fat from the skillet
  3. Add 1/2 cup water to the skillet and bring to a boil, scraping up any browned bits from the bottom
  4. Set the drippings aside
  5. Heat olive oil in a large saucepan
  6. Add the onion, carrot, mushrooms and celery
  7. Saute until tender, about 3 to 5 minutes
  8. Add the garlic and cook 1 minute longer
  9. Add tomato paste, reserved drippings, wine, bay leaf, parsley and pepper
  10. Add the meats and juices from the plate
  11. Simmer on very low heat, covered, about 4 hours, or until the meats fall apart
  12. Serves 4.
