Marinara Sauce
  • Ingredients
  • 4 cloves garlic, chopped
  • 4 tablespoons olive oil
  • 4 pounds fresh tomatoes OR
  • 4 (14-1/2 ounce) cans plum tomatoes
  • 1 teaspoon dried oregano
  • 6 tablespoons of fresh parsley
  • salt and freshly ground black pepper to taste
Directions
  1. Saute garlic in olive oil
  2. If using fresh tomatoes, remove skin by blanching in water for 30 seconds
  3. Then cut off stem end and squeeze out seeds
  4. If using canned tomatoes, drain the liquid
  5. Chop tomatoes and add to pan with garlic along with remaining ingredients
  6. Bring to a boil and simmer uncovered for about 20 minutes
  7. Serves 4.
