1/3 cup pine nuts or walnuts, very lightly toasted
1/3 cup freshly grated Parmesan cheese
1/2 cup virgin olive oil
salt and freshly ground black pepper to taste
Directions
Combine basil, mint, garlic, and nuts in a blender
or food processor
Blend with pulsing action to
mix
Add grated cheese and whirl for 15 seconds
With the machine running, slowly add the olive
oil
Season to taste with salt and freshly ground
black pepper
Continue to process until pesto
reaches desired consistency
Allow pesto to stand
for about 5 minutes before serving to allow flavors
to develop.
Makes about 1 of pesto.
Winter Variation: Substitute 1-1/2 cups fresh parsley for basil
and 2 tablespoons dried for fresh mint
Slightly reduce oil.
