Garam Masala Rub
Garam Masala Rub
Ingredients
1-1/2 tablespoons ground cardamom
1-1/2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground black pepper
1 teaspoon ground cumin
3/4 teaspoon ground coriander
1/4 teaspoon freshly ground nutmeg
2 teaspoons salt
Directions
Place cardamom, cinnamon, cloves, pepper, cumin and coriander in a small skillet over a medium low heat
Toast spices, tossing often until they begin to perfume the air
Stir in the nutmeg and salt; let cool completely
Keeps 3 months. Yield: 1/2 cup SUGGESTED USE: This spice blend is a traditional Indian mixture used to sprinkle over curries as garnish and flavoring
It also makes a spectacular rub on whole chickens (30 minutes) or try a pork loin (1 hour).
