Garlic Chive Pesto
Garlic Chive Pesto
Ingredients
3/4 cup fresh garlic chives, roughly chopped
1 cup fresh Italian flat-leaf parsley
1 small garlic clove
1/4 cup blanched almonds, lightly toasted
1/4 cup freshly grated Parmesan cheese
1/3 cup virgin olive oil
salt and freshly ground black pepper to taste
Directions
Combine chives, parsley, garlic, and nuts in a blender or food processor
Blend with pulsing action to mix
Add cheese and whirl for 15 sec- onds
With the machine running, slowly add the olive oil
Season to taste with salt and freshly ground black pepper
Continue to process until pesto reaches desired consistency
Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 1-1/4 cups of pesto.
