Garlic Thyme Pesto
  • Ingredients
  • 1/2 cup garlic cloves
  • 1/2 cup virgin olive oil
  • 2 to 3 tablespoons fresh or dried thyme
  • 1/3 cup walnuts, lightly toasted
  • 1/4 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach leaves, coarsely chopped
  • salt and freshly ground black pepper to taste
Directions
  1. Peel garlic cloves and simmer in olive oil on lowest heat for about 20 minutes
  2. Do not brown
  3. Set saucepan aside and let cloves cool in the oil. Combine thyme and nuts in a blender or food processor
  4. Blend with pulsing action to mix
  5. Add garlic cloves and cheese, and whirl for 15 seconds
  6. With the machine running, slowly add the olive oil reserved from simmering garlic
  7. Season to taste with salt and freshly ground black pepper
  8. Add spinach leaves and continue to process until pesto reaches desired consistency
  9. Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 3/4 cup of pesto.
