Indian Curry Rub
Indian Curry Rub
Ingredients
3 tablespoons ground coriander
2 tablespoons ground cumin
2 teaspoons freshly ground pepper
2 teaspoons ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground cardamom
1 teaspoon ground cayenne
2 tablespoons ground turmeric
1 tablespoon salt
Directions
Place coriander, cumin, pepper, cloves, cinnamon, ginger and cardamom in a small skillet over medium low heat
Toast spices, tossing often, until they begin to perfume the air
Stir in the cayenne, turmeric and salt
Keeps 3 months. Yield: 1-1/4 cups SUGGESTED USE: Curry blends are mostly used to season a sauce as in the traditional Indian curry
In this case, try it as a flavorful rub on chicken pieces (30 minutes), pork tenderloin (30 to 60 minutes) or even a steak (20 minutes).
