Indian Curry Rub
  • Ingredients
  • 3 tablespoons ground coriander
  • 2 tablespoons ground cumin
  • 2 teaspoons freshly ground pepper
  • 2 teaspoons ground cloves
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cardamom
  • 1 teaspoon ground cayenne
  • 2 tablespoons ground turmeric
  • 1 tablespoon salt
Directions
  1. Place coriander, cumin, pepper, cloves, cinnamon, ginger and cardamom in a small skillet over medium low heat
  2. Toast spices, tossing often, until they begin to perfume the air
  3. Stir in the cayenne, turmeric and salt
  4. Keeps 3 months. Yield: 1-1/4 cups SUGGESTED USE: Curry blends are mostly used to season a sauce as in the traditional Indian curry
  5. In this case, try it as a flavorful rub on chicken pieces (30 minutes), pork tenderloin (30 to 60 minutes) or even a steak (20 minutes).
