Angel Hair With Purple Pesto
  • Ingredients
  • 1/2 cup Purple Pesto (page 19)
  • 1 pound dry or fresh angel hair pasta
  • 1/4 cup heavy cream
  • 1 cup minced smoked turkey or chicken
  • freshly grated Parmesan cheese
  • very finely slivered sun-dried tomatoes for garnish
Directions
  1. Place pesto in a large serving bowl. Meanwhile, cook the angel hair until al dente, or firm to the bite
  2. Stir the cream and 1 tablespoon of the hot pasta water into the pesto
  3. Drain the pasta and transfer it to the serving bowl
  4. Toss with the pesto and smoked turkey
  5. Serve garnished with freshly grated Parmesan cheese and slivered sun- dried tomatoes
  6. Serves 4.
