Garlic Pesto Snow Peas With Pasta
  • Ingredients
  • 1 pound dry or 1 load fresh pasta
  • 3/4 pound fresh snow peas
  • OR young sugar snap peas
  • 2 tablespoons butter
  • 1/4 cup Garlic Chive Pesto
  • OR Garlic Thyme Pesto
  • 1 cup thinly sliced scallions
  • 1 pint half and half
  • salt and freshly ground pepper to taste
  • freshly grated Parmesan cheese
Directions
  1. Wash and string the peas
  2. Cut on the diagonal into 1/2-inch pieces
  3. You should have about 3 cups. In a large pan, melt the butter with half of the pesto
  4. Add the peas and scallions and saute over a low heat until tender, 8 to 10 minutes
  5. Add the cream, and salt and pepper to taste
  6. Reduce until the sauce is slightly thickened, about 2 minutes. Stir in the remaining pesto
  7. Taste and adjust for seasoning
  8. Toss with hot pasta and serve with freshly grated Parmesan
  9. Serves 4.
