Fresh Rosemary Peppercorn Rub
  • Ingredients
  • 1 /4 cup chopped fresh rosemary
  • 1 tablespoon coarse ground black pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt
Directions
  1. Place rosemary, pepper, mustard, oregano, garlic powder and salt in a spice grinder or blender
  2. Grind to a coarse powder
  3. Keeps tightly sealed in the freezer for 3 months. Yield: 1/2 cup SUGGESTED USE: This strong flavored rub is perfect on chicken, whole or pieces (2 hours)
  4. To keep the chicken moist, first brush the chicken with olive oil and then apply the rub
  5. You might also try it on lamb chops or a butterflied leg of lamb (2 hours).
