Chilled Cilantro Lobster
  • Ingredients
  • 1 bay leaf, crumbled
  • 3 or 4 lemon slices, halved
  • 1/4 teaspoon salt
  • 2 large lobster tails
  • 3 tablespoons Cilantro Pesto
  • 3 tablespoons sour cream
  • 3 tablespoons mayonnaise
  • 1 teaspoon lime juice
  • salt and freshly ground white pepper to taste
  • Romaine lettuce leaves
  • 1 ripe avocado, sliced
  • lime slices and sprigs for garnish
Directions
  1. Bring 3 quarts of water with bay leaf, lemon slices, and salt to a boil
  2. Add lobster to boiling water
  3. Simmer, covered, for 5 to 8 minutes, until tails are cooked through
  4. Remove lobster with a slotted spoon
  5. Allow to cool
  6. Slit the underside and remove meat
  7. Cut into bite-sized chunks and refrig- erate. Combine the pesto, sour cream, mayonnaise, and lime juice in a small bowl
  8. Add salt and pepper to taste
  9. Arrange the lobster and avocado slices on the lettuce
  10. Pour the cilantro sauce over the shrimp and garnish with lime and cilantro
  11. Serves 2.
