Red Ricotta Caraway Coleslaw
  • Ingredients
  • 3 tablespoons Ricotta Caraway
  • Thyme Pesto (page 42)
  • 2 tablespoons white vinegar
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 cups grated carrots
  • 3 cups grated red cabbage
  • 2 to 3 tablespoons minced scallions,
  • including some green
  • leaf lettuce
  • 1 (8 ounce) can Mandarin oranges for garnish
Directions
  1. In a ceramic bowl, whisk together the pesto, vine- gar, mayonnaise, sugar, and salt to make the dress- ing
  2. Toss the carrots, cabbage, and scallions with the dressing and taste for seasoning
  3. Chill. Arrange the lettuce on individual salad plates
  4. Top with the coleslaw and garnish with Mandarin oranges
  5. Serve cold
  6. Serves 4 to 6.
