Basil Rice Casserole
  • Ingredients
  • 2 quarts salted water
  • 1/2 cup long-grain white rice
  • 2 tablespoons butter
  • 1/2 cup Classic Basil Pesto (page 17)
  • 4 cups roughly chopped yellow onions
  • salt and freshly ground black pepper to taste
  • 1/4 cup grated Swiss cheese
  • 1/4 cup light cream
Directions
  1. Preheat the oven to 325F
  2. Bring the water to a brisk boil
  3. Add the rice and boil uncovered for about 5 minutes
  4. Drain and set aside
  5. Melt the butter with the pesto in a large pan
  6. Stir in the chopped onions, rice, and freshly ground pepper and salt
  7. Mix well, until everything is coated with the butter-pesto mixture. Place in a shallow pyrex baking dish
  8. Cover tightly with heavy foil and bake for 40 to 50 min- utes, stirring once or twice, until the rice is tender
  9. Remove and stir in grated cheese and cream
  10. Season with salt and freshly ground black pepper to taste
  11. Serve immediately
  12. Serves 4 to 6.
