ROASTED GARLIC CHEESE TOASTS
  • Ingredients
  • Makes 12 pieces:
  • 2 tablespoons olive oil
  • 12 slices (1/4-inch thick) baguette
  • 1/2 cup freshly grated Parmesan cheese
  • 2 heads roasted garlic (See page 185)
  • 2 tablespoons minced chives
Directions
  1. Brush one side of the baguette slices with the olive oil and dip into grated Parmesan
  2. Arrange bread in greased basket and rotate until bread is crisp, about 8 to 10 minutes. Squeeze roasted garlic from bulb and mash well
  3. Spread garlic on the toasts and top with chives
  4. Serve as appetizers or with soup or salad.
