TANDOORI SHRIMP SALAD WITH CURRY VINAIGRETTE
  • Ingredients
  • 1 recipe Tandoori Shrimp
  • 8 cups mixed salad greens
  • 2 large tomatoes, cut in wedges
  • 2 carrots, cut into strips
  • 2 stalks celery, cut into strips
  • CURRY VINAIGRETTE:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons minced green onions
  • 1 teaspoon minced fresh garlic
  • 1 tablespoon curry powder
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
Directions
  1. Prepare the Tandoori Shrimp
  2. Meanwhile, prepare the vinaigrette by whisking together all ingredients
  3. Toss the salad greens with 1/4 cup of the vinaigrette
  4. Mound the lettuce on serving plates
  5. Top with Tandoori shrimp, tomatoes, carrots and celery
  6. Drizzle more dressing to taste over all.
