Chipotle Honey Paste
  • Ingredients
  • 2 cloves garlic, peeled
  • 1/4 cup chopped onion
  • 1 /4 cup chipotle chilies in adobo sauce
  • 3 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
Directions
  1. With a food processor running, drop in the garlic cloves and process until finely minced
  2. Add the onion and chipotle chilies with some of the adobo sauce
  3. Pulse to finely chop
  4. Add the honey, lime juice and salt, then puree
  5. Use immediately or cover tightly and store in the refrigerator for up to 1 week. Yield: 3/4 cup SUGGESTED USE: Chipotle chilies are jalapeno chilies which have been smoked, not just dried
  6. A relatively mild jalapeno transforms into a very spicy chili indeed
  7. The adobo sauce is a barbecue sauce
  8. The smoky flavor of the chilies in contrast to the sweet of the honey makes this paste a real treat
  9. Smear it on steak (2 to 3 hours), London broil (4 to 6 hours), tuna steaks (2 hours) or even chicken breasts (2 hours).
