SOUTHWESTERN TACO CHICKEN PIECES WITH LIME-CHILI MARINADE
  • Ingredients
  • Lime Chili Marinade (See page 212)
  • 1 3-1/2 to 4 pound chicken, cut into pieces
  • 3/4 cup flour
  • 1 (1 ounce) envelope Taco seasoning mix
  • 2 eggs beaten with 2 tablespoons water
Directions
  1. Prepare the marinade in a large bowl
  2. Wash and thoroughly dry the chicken pieces
  3. Add to the marinade and toss to coat well
  4. Cover and refrigerate for 1 to 4 hours. Toss the flour and Taco seasoning mix together on a plate
  5. Dip the chicken in the beaten egg mixture and coat well with taco-flour mixture
  6. Rotate the chicken in the Flat Standard Basket for 45 minutes or until browned and cooked through. Tip: You may skip the marinating in this recipe and simply coat the chicken in egg and the taco-flour mixture before rotating.
