CUBAN CHICKEN WITH MOJO MARINADE
  • Ingredients
  • Cuban Mojo Marinade (See page 213)
  • 6 chicken breast halves
Directions
  1. Prepare the Mojo Marinade and place in a large bowl
  2. Wash and thoroughly dry the chicken breasts and add to the marinade
  3. Toss to coat well
  4. Cover and refrigerate for 1 to 3 hours. Rotate the chicken in the Flat Standard Basket for 45 minutes or until lightly browned and cooked through.
