PECAN-CRUSTED BONELESS CHICKEN BREASTS
  • Ingredients
  • 6 skinless boneless chicken breast halves
  • 1/2 cup Dijon mustard
  • 2 eggs
  • 1/2 cup finely chopped toasted pecans
  • 1-1/2 cups plain dry bread crumbs
Directions
  1. Wash and thoroughly pat dry the chicken breasts
  2. Pound the chicken breasts lightly between two sheets of plastic wrap with a flat mallet until they are 1/2-inch thick
  3. Stir together the mustard and eggs in a flat bowl
  4. Toss together the pecans and bread crumbs in another bowl. Dip chicken in egg mixture and then coat well with the bread crumbs
  5. Rotate the chicken in the Flat Standard Basket for 20 minutes or until lightly browned and cooked through.
