Combine the chicken strips, zucchini, red
pepper, lemon zest and juice, sugar, oregano
and salt and pepper to taste in a large bowl
Toss to coat well
Cover and let stand 15
minutes.
Thread a zucchini, red pepper, then weave a
strip of chicken on a kebob skewer, repeat and
then finish with another zucchini and pepper
Repeat 7 more times
Rotate kebobs for 25 to
30 minutes or until the chicken and vegetables
are cooked through.
