soy sauce
Reserve 3 tablespoons of the sauce
and place the remaining sauce in the warming
tray in the lower position to heat while the hens
rotate.
Wash and thoroughly dry the game hens
Season inside cavity with salt and pepper and
brush the game hens with the 3 tablespoons of
sauce.
Rotate the game hens on the spit rods for 45 to
55 minutes or until the internal temperature
reaches 170 degrees on the instant thermometer
inserted in the thigh meat
