Roasted Garlic Paste
  • Ingredients
  • 4 whole heads garlic
  • 1/4 cup olive oil
  • 1 teaspoon salt
Directions
  1. Remove excess leaves from the outside of the garlic heads
  2. With a serrated knife cut off the top of each head, exposing the garlic cloves
  3. Place the heads, cut side up, in a small dish and pour on the olive oil
  4. Cover tightly and roast in the oven at 375 F
  5. for 1 hour or until the garlic is very soft and lightly browned
  6. Squeeze the roasted garlic out of the heads and mash with the salt
  7. Keeps for 2 days in the refrigerator. Yield: 1/3 cup SUGGESTED USE: This paste is always delicious simply spread on French bread slices as an appetizer or used to garnish a salad or soup
  8. However, it also makes a delicious paste rubbed on the outside of a steak (30 minutes) or try it on any seafood or fish (30 minutes) or even boneless chicken breasts (30 minutes).
