PIQUANT PORK KEBOBS
  • Ingredients
  • 1(12 ounce) jar apricot preserves
  • 1 (8 ounce) bottle Russian salad dressing
  • 1 envelope onion soup mix
  • 1-1/2 pounds boneless pork loin
  • or tenderloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 2 zucchini, cut into 1-inch pieces
Directions
  1. Combine the preserves, salad dressing and onion soup mix in a bowl
  2. Add the pork cubes, cover and marinate for 4 to 24 hours. Thread meat alternating with red pepper and zucchini cubes on the kebob skewers
  3. Rotate 25 to 30 minutes or to desired doneness
  4. Remove pork cubes and vegetable cubes to serving plates
  5. Serve with cooked white rice.
