Mash with
the olive oil and stir in the green onions.
Trim any fat from the sirloin and cut a
horizontal slit through it to form a pocket the
length of the steak
Spread the filling into the
pocket
Use toothpicks as needed to secure the
stuffing.
Rotate the steak in the Flat Standard Basket for
18 minutes for rare or 22 minutes for medium
If not brown enough, position the basket facing
the heating coils and push the switch to the
pause-to-sear position
Rotate 2 to 3 minutes
more on each side
Remove and slice thinly
across the grain into thin strips.
