STEAK WITH CHILI MUSHROOM SAUCE
  • Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 (7 ounce) cans chopped green chilies
  • 1 teaspoon minced fresh jalapeno chili
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 2 tablespoons minced fresh cilantro
  • 4 tablespoons unsalted butter
  • 1/2 pound mushrooms, sliced
  • 1-1/2 pounds steaks (top sirloin,
  • Spencer, or rib eye)
  • Spicy Texas Rub (see page 91)
Directions
  1. To make the chili sauce, heat the oil in a small saucepan and add the onion
  2. Cook until soft
  3. Add the chilies, oregano, and salt
  4. Simmer for 5 minutes
  5. Stir in the cilantro
  6. Keep warm. Heat butter in a small skillet and cook the mushrooms until soft
  7. Keep warm. Coat the steaks liberally with Spicy Texas Rub and rotate in the Flat Standard Basket for 18 minutes for rare or 22 minutes for medium
  8. If not brown enough, position the basket facing the heating coils and push the switch to the pause-to-sear position
  9. Rotate 2 to 3 minutes more on each side
  10. Top with mushrooms and Chili Sauce.
