SALMON WITH CUCUMBER SAUCE
  • Ingredients
  • 1-1/2 pounds salmon fillets,
  • cut into serving pieces
  • Juice of 1 lemon
  • CUCUMBER SAUCE:
  • 1 medium cucumber
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons white vinegar
  • 1 small clove garlic, minced
  • 1 tablespoon snipped fresh dill
  • 1 cup plain yogurt
  • 2 teaspoons olive oil
Directions
  1. Drizzle the lemon juice over the salmon and rotate the salmon in the Flat Standard Basket for 10 to 15 minutes or until just cooked through
  2. Serve with Cucumber Sauce. To make the Cucumber Sauce, peel the cucumber and halve lengthwise
  3. Remove the seeds from the center of the cucumbers, then grate
  4. Place in a bowl and sprinkle with salt
  5. Refrigerate for 1 hour
  6. In another bowl, stir together the vinegar, garlic, dill, yogurt, and olive oil
  7. Drain the cucumbers and add to the yogurt mixture
  8. Refrigerate for at least 4 hours before serving.
