SNAPPER FILLETS WITH TOMATO-CILANTRO SAUCE
  • Ingredients
  • 1-1/2 pounds red snapper, cut into serving-
  • size pieces
  • 1 tablespoon olive oil
  • TOMATO-CILAIUTRO SAUCE:
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups peeled, diced fresh tomatoes
  • 1 serrano chili, minced
  • 2 tablespoons minced fresh cilantro
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and freshly ground pepper to taste
Directions
  1. Brush fish with olive oil
  2. Rotate the fish in the Flat Standard Basket for 15 to 20 minutes or until just cooked through. For the sauce, heat the oil in a saucepan over medium-high heat
  3. Add onion and garlic until softened
  4. Add the tomatoes, serrano chili, fresh cilantro, coriander, cumin, and bay leaf
  5. Bring to a boil; reduce heat and simmer, uncovered, 10 minutes
  6. Season to taste with salt and pepper
  7. Pour over cooked fish to serve.
