LEMON CHICKEN WITH ZUCCHINI AND RED PEPPERS
  • Ingredients
  • 4 boneless skinless chicken breast halves
  • Lemon-Garlic Marinade (see page 209)
  • 1 medium zucchini, diced
  • 1 small red bell pepper, diced
  • 2 (14 x 12 inch) sheets heavy-duty
  • aluminum foil
Directions
  1. Wash and pat dry the chicken breasts
  2. Make the marinade and immerse the chicken
  3. Cover and refrigerate 30 to 60 minutes. Lay the chicken breasts on one sheet of foil
  4. Top with the zucchini and peppers and drizzle with 2 tablespoons marinade
  5. Top with second sheet of foil and fold the edges over three times to seal the foil packet
  6. Rotate in the Flat Standard Basket for 20 minutes.
