MEDITERRANEAN SNAPPER
  • Ingredients
  • 2 red snapper fillets
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 plum tomatoes, seeded and diced
  • 1 tablespoon capers, rinsed
  • 2 tablespoons minced Kalamata olives
  • Pinch dried red pepper flakes
  • 1 tablespoon minced fresh basil leaves
  • 2 tablespoons butter
  • Salt and pepper
  • 2 (14 x 12 inch) sheets heavy-duty
  • aluminum foil
Directions
  1. Place fish on one sheet of foil
  2. In a small bowl toss together the olive oil, vinegar, tomatoes, capers, olives, red pepper flakes and basil
  3. Spoon over the fish
  4. Dot with butter and sprinkle with salt and pepper
  5. Top with second sheet of foil and fold edges over three times to seal the foil packet
  6. Rotate in the Flat Standard Basket for 15 minutes.
