In a small bowl mash together the garlic, orange zest, red
pepper flakes and coriander
Stir in the Hoisin, sesame oil,
soy sauce and oil to make a paste
Use immediately or
cover tightly and refrigerate up to 3 days.
Yield: 1/3 cup
SUGGESTED USE: This slightly sweet and spicy paste is
really more of a glaze than a true paste, used more often
during the cooking than before
However, don't hesitate to
smear this on shrimp (2 to 3 hours), chicken (4 to 6 hours)
or pork tenderloin (4 to 6 hours).
