ROASTED ZUCCHINI WITH RED ONION
  • Ingredients
  • 4 small zucchini, cut lengthwise
  • 1 small red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper
  • 2 tablespoons chopped parsley
  • 2 (14 x 12 inch) sheets heavy-duty
  • aluminum foil
Directions
  1. Lay zucchini cut side up on one sheet of foil
  2. Top with onion; drizzle with oil and sprinkle with salt, pepper and parsley
  3. Top with second sheet of foil and fold edges over three times to seal the foil packet
  4. Rotate in the Flat Standard Basket for 15 minutes.
