ROASTED GINGER AND ORANGE CARROTS
  • Ingredients
  • 1 pound carrots, peeled and halved
  • crosswise and lengthwise
  • 3 tablespoons butter, melted
  • 1 tablespoon minced fresh ginger
  • 2 tablespoons fresh orange juice
  • 1 teaspoon grated orange zest
  • 1 tablespoon honey
  • Salt and pepper
  • 1 tablespoon minced fresh parsley
  • 2 (14 x 12 inch) sheets heavy-duty
  • aluminum foil
Directions
  1. Lay carrots on one sheet of foil
  2. Toss together the butter, ginger, orange juice and zest and honey
  3. Drizzle over the carrots
  4. Sprinkle with salt, pepper and parsley
  5. Top with second sheet of foil and fold edges over three times to seal the foil packet
  6. Rotate in the Flat Standard Basket for 20 minutes.
