ITALIAN ZUCCHINI. MUSHROOMS AND PEPPERS
  • Ingredients
  • 4 small zucchini,
  • cut into 1/2-inch thick slices
  • 8 large mushrooms
  • 1/2 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon Italian herb seasoning
  • Salt and pepper
  • 2 (14 x 12 inch) inch sheets heavy-duty
  • aluminum foil
Directions
  1. Place zucchini, mushrooms and bell pepper on one sheet of foil
  2. Drizzle with olive oil, Italian herb seasoning, salt and pepper
  3. Top with second sheet of foil and fold edges over three times to seal the foil packet
  4. Rotate in the Flat Standard Basket for 15 minutes.
