ROASTED FRESH BEETS WITH ORANGE SAUCE
  • Ingredients
  • 1/3 cup fresh orange juice
  • 1/3 cup chicken broth
  • Zest of 1/2 orange
  • 1/2 teaspoon minced fresh rosemary
  • or 1/8 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon unsalted butter
  • 8 fresh beets, peeled and ends trimmed
Directions
  1. In a small saucepan combine the orange juice, chicken broth, orange zest, and rosemary
  2. Bring to a boil, stirring often until reduced by about half
  3. Season with salt and pepper. Place the beets in the Deep Basket and rotate for 45 minutes or until very tender
  4. Reheat the Orange Sauce and whisk in the butter
  5. Pour over the beets to serve.
