Lemon Herb Paste
  • Ingredients
  • 5 cloves garlic, minced
  • 1 tablespoon grated lemon rind (zest)
  • 1 tablespoon dried thyme, crumbled
  • 2 teaspoons dried rosemary, crumbled
  • 2 teaspoons dried sage leaves, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground white pepper
Directions
  1. Mash garlic and lemon zest with a mortar and pestle or in a mini-processor
  2. Add the thyme, rosemary, sage, salt and pepper and combine well
  3. Use immediately. Yield: 1/4 cup SUGGESTED USE: This simple paste highlighted with the lemon zest is perfect with poultry
  4. Try it rubbed under and over the skin of a whole chicken (2 hours) or Cornish Game Hens (2 hours) or even rubbed on chicken pieces (2 hours).
