Lemon Herb Paste
Lemon Herb Paste
Ingredients
5 cloves garlic, minced
1 tablespoon grated lemon rind (zest)
1 tablespoon dried thyme, crumbled
2 teaspoons dried rosemary, crumbled
2 teaspoons dried sage leaves, crumbled
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper
Directions
Mash garlic and lemon zest with a mortar and pestle or in a mini-processor
Add the thyme, rosemary, sage, salt and pepper and combine well
Use immediately. Yield: 1/4 cup SUGGESTED USE: This simple paste highlighted with the lemon zest is perfect with poultry
Try it rubbed under and over the skin of a whole chicken (2 hours) or Cornish Game Hens (2 hours) or even rubbed on chicken pieces (2 hours).
