THAI RED CURRY SAUCE
  • Ingredients
  • 1 tablespoon vegetable oil
  • 2 tablespoons prepared Thai red-
  • curry paste
  • 1 (14 ounce) can unsweetened
  • coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 2 tablespoons minced fresh cilantro
Directions
  1. Heat oil in a medium saucepan
  2. Add curry paste and stir and mash into the oil over medium-low heat to warm the paste
  3. Add the coconut milk and bring to a simmer
  4. Stir in the fish sauce, sugar and salt
  5. Taste for seasoning and stir in the cilantro just before pouring over rotated chicken, beef or pork.
