Place oyster sauce, soy sauce and ketchup in a small
mixing bowl
Add sugar and stir to dissolve the sugar a bit
Stir in the garlic, ginger, shallots and chili paste.
Yield: 1/2 cup
SUGGESTED USE: Oyster sauce and chili paste with garlic
are available at Asian grocery stores and many supermarkets
in the Oriental section
Rub this paste under and over the
skin of a whole chicken (1 hour) before roasting.
