Sauce All
  • Ingredients
  • 6 tablespoons olive oil
  • 1/2 cup chopped onion
  • 8 strips lightly smoked, lean bacon
  • 1 (28 ounce) can whole peeled tomatoes, drained
  • Pinch of crushed dried red pepper
  • salt to taste
  • freshly grated Pecorino Romano cheese
Directions
  1. Heat oil in a large skillet
  2. Add onion and saute over low heat, stirring until golden
  3. Add bacon and saute 2 more minutes
  4. Squeeze juice and seeds from tomatoes and chop
  5. Add tomatoes to skillet and cook, stirring, over medium heat, until soft- ened and sauce is slightly thickened about another 15 minutes
  6. Add red pepper and salt to taste
  7. Pass with grated Pecorino Romano cheese
  8. Serves 4.
