Creamy Mushroom & Pea Sauce
  • Ingredients
  • 1/3 cup butter
  • 2 cups sliced mushrooms
  • 2/3 cup creme fraiche
  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • salt and freshly ground black pepper to taste
  • and nutmeg to taste
  • 1-1/2 cups frozen green peas
  • fresh mint, optional
Directions
  1. In a medium-size skillet, melt 2 tablespoons of but- ter
  2. Add mushrooms
  3. Saute gently until tender
  4. Set aside
  5. In a medium-size bowl, beat together creme fraiche, egg yolks, parmesan cheese, salt, pepper and nutmeg
  6. In a medium-size saucepan, melt remaining butter
  7. Stir in creme fraiche mix- ture
  8. Add peas
  9. Cook over very low heat, stirring, until mixture is heated through and begins to thicken slightly
  10. Stir in cooked mushrooms
  11. Serve over hot pasta at once and garnish with mint, if desired
  12. Serves 4.
